If the flour is intended for macarons, a second refining stage is recommended to render it impalpable and to give the finished product its sheen.

100% pure, with a degree of roasting that varies according to the customer's requirements and use. Slightly roasted it has an almost neutral flavour, so it can be added to a mixture or a dough, if roasted more it acquires a more intense flavour so it can be used to provide the flavour of almond ice cream and semifreddo.
After some time the emergence of oil on the surface is an indication of natural character of the product. The hazelnut naturally contains a percentage of oil, so as it matures the heavy part of the paste sinks and the oil surfaces, acting as a natural preservative. It is therefore advisable to stir well, from the bottom up, before use.
