ALMOND FLOUR

Raw flour:

  • From raw sweet almonds
  • From raw skinned sweet almonds

If the flour is intended for macarons, a second refining stage is recommended to render it impalpable and to give the finished product its sheen.

Toasted flour:

  • From raw sweet almonds
  • From sweet skinned almonds

Typically used for almond baci di dama.

Standard packaging: vacuum packed/thermal sealed 5 kg

Storage instructions: it is advisable to consume the product within 12 months so that the organoleptic characteristics remain unchanged. Once the vacuum pack has been opened the product should be stored in a glass container so that it does not absorb moisture. Store in a cool place away from direct sunlight.

ALMOND PASTES

100% pure, with a degree of roasting that varies according to the customer's requirements and use. Slightly roasted it has an almost neutral flavour, so it can be added to a mixture or a dough, if roasted more it acquires a more intense flavour so it can be used to provide the flavour of almond ice cream and semifreddo.

After some time the emergence of oil on the surface is an indication of natural character of the product. The hazelnut naturally contains a percentage of oil, so as it matures the heavy part of the paste sinks and the oil surfaces, acting as a natural preservative. It is therefore advisable to stir well, from the bottom up, before use.

Types of almond pastes:

  • SWEET SKINNED ALMOND PASTE 100% pure - 100% natural.
    Derived either from Sicilian almonds and therefore having a slightly bitter taste. Suitable for granitas and ice-cream.
    Or derived from California almonds and therefore having a neutral flavour suitable for providing the fat element to a cream.
  • SWEET SKINNED TOASTED ALMOND PASTE 100% pure, natural
  • NATURAL TOASTED ALMOND PASTE pure 100% natural
